Our newest destination in Hotel Nassau Breda is a place made for sharing, savouring, and slowing down. Inspired by Riviera cuisine and infused with Parisian classics, bold Basque flavours, and Venetian bites, it’s more than just a restaurant — it’s a social hotspot.

Imagine warm lighting over rustic wood, laughter around shared plates, and guests lingering over dessert and wine. Here, we celebrate fresh, seasonal produce, vibrant flavours, and a menu designed to be enjoyed together in a relaxed yet elegant atmosphere.

 

THE POSITION

As Head Chef, you are the creative force and operational leader of our restaurant’s culinary team. You’ll be responsible for bringing the concept to life through inspired menu development, high-quality execution, and outstanding leadership.

You combine creative flair with strong business acumen, balancing flavour, innovation, and efficiency. You’ll build and coach a talented kitchen team, ensure every dish reflects our high standards, and develop seasonal menus that excite our guests.

KEY RESPONSIBILITIES

  • Lead and inspire the kitchen brigade, ensuring excellence in every aspect of food preparation and presentation.

  • Contribute to developing creative menus that reflect the restaurant’s concept; Mediterranean, Parisian, Basque, and Venetian influences with a contemporary twist.

  • Manage and optimise kitchen operations, including cost control, purchasing, and inventory management.

  • Maintain the highest food hygiene and safety standards (HACCP).

  • Collaborate closely with the Restaurant Manager and F&B team to deliver a seamless guest experience.

  • Recruit, train, and motivate kitchen staff, fostering a culture of teamwork, creativity, and excellence.

  • Oversee supplier relations, product quality, and menu engineering to meet financial goals.

  • Stay ahead of culinary trends and bring fresh ideas to keep the restaurant relevant and exciting.

Job requirements

WHAT YOU’LL BRING

  • Proven experience as a Head Chef in a high-end or concept-driven restaurant.

  • A deep understanding of Mediterranean, European, or fusion cuisine with a passion for tapas and sharing-style dining.

  • Strong leadership skills with the ability to build, inspire, and empower a team.

  • A balance between creativity and operational focus, you know how to make things delicious and efficient.

  • Excellent communication and collaboration with front-of-house and management.

  • Fluent in English (Dutch is an advantage).

  • A curious, energetic, and entrepreneurial mindset, ready to bring a concept to life.
